More Japanese Dining Choices Coming this Fall

News - Japanaese Restaurants Opening Fall 2025: samples of offerings and logos from Maneki, Sharigato, and Uchi.CHARLOTTE, NC—In addition to the recently opnend YUGENN, three new concepts have been announced as opening this fall.

Maneki Robatayaki is coming to Latta Arcade in uptown Charlotte. Chef-owner Sam Hart, a James Beard Award finalist, promises local meat and seafood grilled in traditional Hokkaido Japanese methods. Robatayaki (also referred to as “Robata”) is a cooking method much like barbecue, in which items of food are cooked at varying speeds over hot charcoal. It is a centuries-old culinary style that originated with fishermen cooking around a communal hearth in Hokkaido, Japan’s northernmost island.

Sharigato, a new hand-roll-focused sushi restaurant from chef-owner Shari Lynne Robins, will open at The Joinery in Optimist Park. Inspired by Los Angeles- and New York CIty-based KazuNori, Sharigato will serve hand rolls one at a time, in which the seaweed is crispy on the outside and the rice is warm. on the inside. A separate takeout window, dubbed Shariboto, will offer maki-style rolls wrapped in a special film to help retain texture.

Uchi, the sushi-focused restaurant founded by Austin, Texas and James Beard award-winning chef Tyson Cole, plans to open a new location in Plaza Midwood. The Charlotte location will be part of the Commonwealth development and marks Uchi’s first entry into North Carolina. Uchi, which means “house” in Japanese, first opened in a refurbished bungalow in Austin, in 2003. Uchi also has restaurants in Dallas, Houston, Denver, Miami, Miami Beach, and Newport Beach.

Maneki and Sharigato are both hosting popup events until their brick-and-mortar openings.
