Juicy Dumpling Now Open in University City
CHARLOTTE, NC—Juicy Dumpling, which serves handmade Chinese dumplings, bao, nopodles, and more, opened earlier this month at The Boardwalk at University Place on J M Keynes Drive in University City. The new restaurant, which occupies the space formerly filled by Crafty Crab Seafood, features a large viewing window that allows customers to watch kitchen employees roll dough and wrap dumplings. According to Juicy Dumpling’s web site, “Flour is mixed, rested and rolled on site, and fillings are chopped and seasoned the same day they are served.”
In addition to a variety of dumplings (including steamed, pan-fried, boiled, spicy and sour) and steamed and pan-fried bao (buns), Juicy Dumpling serves a variety of appetizers, or small plates, as well as handmade Chinese noodles, fried rice, chow mein, and vegetables.
The restuarant’s web site states, “Every wrapper is rolled and pleated in our own kitchen, never machine-stamped, so the skin stays thin at the edge and springy where the filling sits.. Fillings are whipped with stock until they hold liquid, which is why the first bite of a steamed bun releases real soup instead of only meat. Chilies are toasted and pressed into oil in house for aroma and depth rather than blunt burn, with plenty of mild dishes on the very same menu.”
